Mediterranean Monday: Pumpkin Dip!

Hello Friends!

Happy beautiful October! Can you believe it? It finally feels like fall! I actually had to turn on the heat this weekend. It was also the weekend of my Friends Warming party, and the weather was perfect for a fire in the fire pit. Well…almost. It ended up being a little rainy, so we had to improvise and move the fire pit into the carport. With just a couple of logs on it at a time, we were able to have a fire under shelter, without toasting the ceiling!

There were just about 20 of us at my house, and I made lots of food to go around. So much food, in fact, that I don’t even need to grocery shop or cook this week because I’m still swimming in chili and turkey sliders…which went like gang busters, but I might’ve gotten a little carried away when estimating how many I needed! There was also some Curry Meatball Stew, Buffalo Chicken Dip, Salsa and Guac. I needed a little sweet to balance things out — cue the cupcakes and Pumpkin Dip!

Originally I had planned on making caramel dip, but I had a few cans of pumpkin in the cupboard and decide to use some to make a smoothie last week. I only used 1/2 cup of pumpkin, so I mixed the rest with some cream cheese and pumpkin pie seasoning, then picked up a box of ginger snaps to make the kids happy. They loved it so much, I decided to forego the caramel dip and make a full batch of pumpkin dip in its place. I put out some ginger snaps, and sliced up some green and red apples to pair with it.

So…are you ready for a really quick, really simple treat?

Pumpkin Dip

Ingredients:

  • 1 can of pumpkin
  • 1 8oz package of cream cheese
  • 1/2 tsp vanilla
  • 1-2 tsp pumpkin pie seasoning
  • 1/4 cup brown sugar

Directions:

  1. Only one step – put all ingredients into a mixing bowl and beat with a mixer until well-blended.
  2. Serve with ginger snaps and apple slices….or graham crackers, cookies, pretzels…get creative, because this stuff is delish on just about anything!

Not gonna lie…I was glad to have a little of this stuff left. I definitely put it on a waffle for breakfast the next morning, and Logan topped one of the un-iced cupcakes with it (I ran out of icing and wasn’t going out to buy more for three cupcakes!) and he swears by it.

It’s inexpensive, quick and easy…what more could you ask for?!
